Event Channel is new to me - they appear to look the same. Why would I choose one over the other?

Event Log only supports the ones listed under "Windows Logs" in Event Viewer. Event Channel can open any of the logs under "Applications and Services Logs."

Ok. What confused me then was some items on the Event Log menu that are also on the Open Event Channel menu. Just re-examined them. EVERY item under Open Event Log is also on the Open Event Channel menu. But Open Event Channel does have 4 additional entries.
So, for example, what would be the difference between System on either menu?

The ones that show up in both lists are the same Event Logs, the difference is in how they're accessed via the Windows API. Event Logs were in LogFusion before Event Channels were a thing, so when we added Event Channels, we left Event Logs there as well to avoid confusion.

Having a look at them though, there are some differences as to how the data from those logs are displayed. I'm going to check in with our developers on those.

Just a quick update, we've fixed up the inconsistencies between Event Log and Event Channel and the fixes will be included in the next release of LogFusion.
